<p>做法很簡單，新鮮蒜頭半斤剝皮切碎，新鮮辣椒200公克(愛吃辣的可以買朝天椒)洗淨晾乾或擦乾後切碎。全部放入玻璃罐中，放入3湯匙的鹽，攪拌一下，讓鹽均勻分佈在蒜頭和辣椒上，再倒入米酒至八分滿。加蓋後放置陰涼處1~1.5小時醃一下，再倒入醬油至全滿。稍微攪拌一下，蓋上蓋子後放冰箱醃1星期即可享用香香辣辣的蒜頭辣椒醬油囉!每次食用要用乾淨無水的湯匙搯出來，我的經驗是可以保存半年以上。(p.s. 建議切辣椒時，沒拿刀的手要戴吃手扒雞的透明手套，或是用食物料理機處理，不然手會辣到像火燒。</p>
